Bison Steaks and Butternut Squash Noodles

This was one of the best dinners I have had in a while! It was so delicious and it really just hit the spot. It was a very cold and rainy day in NYC and I was craving something solid and substantial. I still wanted to eat healthy though. Unhealthy food choices may seem to “hit the spot” in the moment only to make us feel terrible later. Making hearty healthy meals always wins in the end. Tonight, I was in the mood to get creative in the kitchen. I have been making a habit of visiting my local farmer’s market once a week and I wanted to use some amazing fresh ingredients. Tonight I knew my body needed protein. My mother has been very generous and has started sending my boyfriend and I food through Omaha. It is amazing because we have delicious meat and seafood that are in the freezer and we can defrost meals at our convenience. This time, my mother shipped us Bison Sirloin Steaks. I have never tried Bison before, but I thought I would give it a try. Bison has a great reputation for being very healthy as it is high in protein, but low in fat. My first time eating bison was a huge success!!! I paired this beautiful meat with spicy butternut squash noodles and it was a perfect fall meal. This dinner turned a very gloomy day into a wonderful celebration! Celebrate food and celebrate life no matter what the day is!! 🙂

Bison Steak Marinade (Optional)

Ingredients

  • Two 1 1/2 inch Bison Steaks
  • Worcestershire Sauce
  • Soy Sauce
  • Salt
  • Pepper
  • Garlic Powder
  • Mixed Herb Grinder

    Directions

    1. Find a dish or tupperware large enough to comfortably fit the 2 steaks and place inside.
    2. Pierce Steaks softly with a fork on both sides.
    3. Add a splash of worcestershire sauce and soy sauce.
    4. Season generously with seasonings.
    5. Let Bison Steaks sit for 30 minutes, repeat on other side.

      Ingredients

      • 1 Package of Butternut Squash Noodles (Whole Foods)
      • Your favorite spicy chili peppers (I used a mix from my local farmer’s market)
      • 1/2 sweet onion
      • 4 Garlic Cloves
      • Organic Tomato Sauce
      • Olive Oil
      • Turmeric Seasoning
      • Curry Powder Seasoning
      • Salt
      • Pepper

        Directions

        1. In a medium to large saucepan drizzle Olive Oil onto your pan.
        2. Add Spicy Peppers, Onions and Garlic and turn heat up to medium-high heat.
        3. Cook until veggies are softened and be careful not to burn.
        4. Turn off heat and resume cooking when your Steak is in the oven. That way food is ready at the same time.
        5. Now that your steak is cooking in the oven, add your Butternut Squash Noodles to your pan and turn heat up to medium-high heat.
        6. Season noodles with seasonings and add 3-4 large spoonfuls of Tomato sauce.
        7. Continue tossing noodles until fully cooked. (About 4-5 minutes)
        8. Serve with Bison Steak!

Bison Steak Recipe

Ingredients

  • Two 1 1/2 inch Bison Steaks
  • Unsalted Butter
  • Olive Oil

    Directions

    1. Preheat your oven for 350 degrees.
    2. Place a medium skillet on your stove and drizzle with Olive Oil and couple pats of Butter.
    3. Turn heat to high heat until pan is sizzling.
    4. Add your Bison Steaks and char on  both sides, about 2-3 minutes each.
    5. Transfer skillet to your oven and cook for 5-6 minutes for medium rare. I did 5 minutes as I like it pretty red in the middle. Cook 8 minutes for medium-well. Bison cooks faster than beef, so be careful not to overcook!
    6. Using an oven mitt carefully remove steaks from oven and allow a couple minutes to cool.
